Lagana is the traditional Greek flatbread we bake on Clean Monday, the first day of the Great Lent that leads to Easter. The recipes are so many, so let’s start with the simpler version. It has a nice crispy crust covered with sesame and a delicious soft crumb with ouzo flavor. Bake it and enjoy!

Ingredients

  • 300 g all purpose flour
  • 100 g semolina
  • 5 g dry instant yeast
  • 1 tsp salt
  • 1 tbsp tahini
  • 230 ml warm water
  • 20 ml ouzo
  • sesame seeds

Instructions

In a large mixing bowl combine flour, semolina and yeast. Add tahini, ouzo, salt and water.

Mix until the sides of your bowl are clean. Knead for about 10 min until you have a smooth dough.

Put it in an oiled bowl & cover with plastic. Allow to rise for 1 hour in a warm spot.

Gently deflate the dough and give an oval shape. Transfer to a well floured baking tray.

Dissolve 1tsp sugar in 50ml of water and brush the flatbread. Sprinkle generously with sesame seeds.

Let rise for another 30min. Then prick the whole surface with a fork.

Bake in a preheated oven, at 220⁰C / 425⁰F for 15 to 20min. Enjoy!
