This is another delicious recipe from the Cypriot cuisine. The dough is made with olive oil and fresh orange juice. The filling basically consists of sauteed onions, sliced olives, orange zest & fresh mint.
I decided to change the recipe a little (regarding the filling) so i skipped the orange zest & the mint. I added some chopped bacon and instead of sprinkling the sesame seeds on the pies, i toasted them and mixed them into the filling. The result was simply amazing!
Ingredients
For the dough
- 500 g all purpose flour
- 1 tsp baking powder
- 1 tsp salt
- 250 g fresh orange juice
- 100 ml olive oil
- 1 tsp apple cider vinegar
For the filling
- 500 g onions, cut into small cubes
- 360 g Kalamata olives, sliced
- 160 g smoked bacon, chopped
- 30 ml olive oil
- 50 g sesame seeds, toasted
Instructions

In a mixing bowl, combine flour, baking powder and salt.

Add the apple cider vinegar and the olive oil.

Start mixing and add the orange juice, all at once.

Knead for 5 min in a stand mixer or 10 to 15 min if you knead by hand.
The dough should be soft & smooth.

Cover it with plastic wrap and let it rest for 30 min.
Meanwhile, prepare the filling.

Pour the olive oil in a wide pan.
Add the onions and sauté for 5 min over medium heat, stirring constantly.

Add the chopped bacon and continue stirring for another 2 min.

Remove from the heat and add the olives and the sesame seeds.
Mix well & let it cool completely.

Weigh the dough and cut into 8 equal pieces.
Cover with plastic wrap.

On a lightly floured surface, roll each piece out into a rectangle appx. 15cm/5.9″ × 25cm/9.8″.

Spread filling on the whole surface, avoiding the edges.
Roll it into a cylinder and swirl it or leave it as it is.

Transfer onto a baking pan covered with parchment paper.
Repeat the process.

Bake in a preheated oven, at 190°C / 375°F for 35 to 40 minutes.
