Ingredients
- 280 g soft margarine
- 175 g brown sugar, granulated
- 70 ml fresh orange juice
- zest of an orange
- 600 g self raising flour
- 750 g jam (your favorite)

In a large mixing bowl beat margarine and sugar on medium speed for 10 min.

Scrape the sides of your bowl and mix in the orange zest.
Add the orange juice. Beat until incorporated.

Add 4 to 5 spoonfuls of flour and mix οn low speed.
Scrape the sides of your bowl and add some more flour.

Stop the mixer. Gradually add the rest of the flour and start mixing by hand.
INFO: The dough is smooth, pliable and easy to work with.

Take it out of the bowl and cut it into 2 pieces (⅔ & ⅓).
Transfer the ⅔ of the dough to a round paper lined baking pan (32cm / 12.6” in diameter).

Spread or roll out the dough into a disk of the same diameter. The center should be slightly thicker than the edges.

With the remaining ⅓ of the dough, shape balls the size of a hazelnut.
Brush the edges with water and place them one next to another.

Spread the jam evenly all over the surface.

Shape different sized balls with the rest of the dough. Drop them randomly onto the jam.

Bake in a preheated oven, at 180⁰C / 350⁰F for 35 to 40min, until it’s nicely golden.
