Tirokafteri (a.k.a. Ktipiti) – Feta Cheese & Hot Peppers Spread with Apple Cider Vinegar

Tirokafteri is a cheese spread basically made with feta, roasted hot peppers (green or red), olive oil and vinegar or lemon juice.

There are recipes that combine feta with cream cheese or yogurt and a variety of herbs and spices such as paprika, coriander, oregano or thyme.

You can prepare it in a food processor and make it completely smooth or just using a fork if you like it chunky.

It’s usually served with grilled meat, fried potatoes and pita bread but can perfectly match several cooked dishes.

Keep it in the refrigerator, covered with olive oil, for up to 4 days.

Ingredients

  • 1 ½ hot green peppers, roasted & peeled
  • 550g feta cheese
  • 7 tbsps extra virgin olive oil
  • 1 ½ tsps coriander powder
  • 2 tsps apple cider vinegar

Instructions

Using a fork crumble the feta cheese.

Mix in the coriander powder.

Add olive oil and apple cider vinegar.
Stir well.

Start mashing the peppers with the fork.

Add them to the cheese mixture and continue mashing.

Mix well until fully incorporated.

Drizzle with extra virgin olive oil and enjoy!
