Lagana is the traditional Greek flatbread we bake on Clean Monday, the first day of the Great Lent that leads to Easter. This is a quick & easy to follow recipe for a delicious, fluffy and full of flavors Clean Monday’s bread.
Ingredients
- 300 g all purpose flour
- 100 g whole wheat flour
- 5 g dry instant yeast
- 1 tsp salt
- 2 tsp dried oregano
- 1 garlic clove, crushed
- 200 ml warm water
- 50 ml dry white wine
- 1 tbsp olive oil
- sesame seeds
Instructions

In a large mixing bowl combine the two flours and yeast.
Add olive oil, oregano, garlic, salt, wine and water.

Mix until the sides of your bowl are clean.
Knead for about 10 min until you have a smooth dough.

Put it in an oiled bowl & cover with plastic.
Allow to rise for 1 hour in a warm spot.

Gently deflate the dough and give an oval shape.
Transfer to a well floured baking tray.

Dissolve 1tsp sugar in 50ml of water and brush the flatbread.
Sprinkle generously with sesame seeds.

Let rise for another 30min. Then prick the whole surface with a fork.

Bake in a preheated oven, at 220⁰C / 425⁰F for 15 to 20min.
