Roasted hot peppers are the key-ingredient for the preparation of the delicious Greek cheese spread called tirokafteri, a.k.a. ktipiti. So, having roasted peppers in the freezer ready for use, is a must for the Greek kitchen.

Ingredients

  • Peppers
  • Olive oil

Instructions

Rinse the peppers and dry them well.

Brush a non stick pan with olive oil and put it on medium heat.
Add the peppers and lightly oil them too.

After a while, their skin will slowly start to blister and turn brown.

Turn them constantly for 15 to 20 minutes.

After they’ve cooled completely, put them in a plastic bag and keep them in the freezer.
